When you think of classic summer salads, what do you think of? I think of lettuce salads, overflowing with beautiful greens. I think of my mom's macaroni and tuna salad. I think of a pasta salad dressed with a simple vinaigrette. What if we combine those together?
This salad blends greens, pasta, tuna, and a simple vinaigrette. And guess what? You end up with a delicious and healthy salad that pairs well with almost any summer meal and can also be a meal unto itself. And best yet, it's simple to pull together.

A Simple Summer Salad Recipe
*all measurements are approximate - just use what you have, use more of what you love, skip what you don't
Salad Ingredients:
2 cups washed and chopped lettuce
1 cup cooked and cooled pasta
1 can albacore tuna, drained
1/4 cup chopped red onion or scallions
1/4 cup chopped salty bites (olives, capers, marinated artichoke hearts, etc)
handful of chopped parsley or other herbs
And any other salad ingredients you want! Radishes would be a lovely addition.
Dressing:
2 TBSP While Balsamic vinegar (or whatever you have)
1 TBSP olive oil
1 teaspoon mustard
salt & pepper to taste (not too much salt if you use a lot of olives and caper)
Combine salad ingredients in a bowl. Top with dressing and toss.
Top with shaved parmesan cheese.
Really yummy.
