Making Rosemary & Pepita Brittle

Are you in the mood for a sweet treat? This brittle has the perfect amount of sweet and savory, which makes it a little bit addictive. You might want to make a double batch!!

Ingredients

2 c white sugar

1/2 c butter

1/2 c water

1/3 c honey/maple syrup

1/2 tsp baking soda

2 1/2 c pepitas (roasted)

1 TBSP fresh rosemary, chopped

1/4 tsp black pepper

sprinkle of sea salt

Directions

  1. Line a large baking sheet with parchment paper and set aside.

  2. Combine sugar, butter, water, and syrup in a small saucepan. Cook over medium heat without stirring until light brown and a candy thermometer reads 300F. This will likely take 10-15 minutes.

  3. Remove from heat and stir in baking soda. The mixture will bubble up.

  4. Quickly stir in pepitas, rosemary, and pepper.

  5. Scrape onto the parchment-lined baking sheet and spread in a thin layer.

  6. Sprinkle lightly with sea salt and allow to cool completely.

  7. Break into pieces and enjoy. Store in an airtight container.

What Are Pepitas

Pepitas are shelled pumpkin seeds. You could use raw pepitas, but they will be a little chewier. I prefer roasted, lightly salted pepitas for this recipe.

Making a Pumpkin Spice Protein Latte

I am not a fan of artificially flavored and sweetened protein powders and shakes. However, I use a powdered whey product to increase my daily protein intake. My favorite is unflavored Naked Whey, which contains nothing except 100% whey protein. I use it to turn my morning coffee into a protein 'latte'. Just 1 scoop adds 13 g of protein, over 300 mg of Ca, for only 60 calories. I am not sponsored by this product; I just love it!

Today I decided to flavor my latte for autumn with some pumpkin and spice.

And please, don't come at me about the fact that this is not actually a latte. I understand that. However, the drink has a latte feel. If you prefer to use espresso, go ahead! If you want to make the whey mixture and then steam it, go for it. The recipe below works well enough for me.

Ingredients

Strong coffee (I prefer decaf)

1 scoop Naked Whey

1 TBSP canned pumpkin

1 tsp brown sugar or sweetener of your choice

1 tsp vanilla extract

1/2 tsp pumpkin pie spice

A sprinkle of cinnamon for garnish

Directions

  1. Brew strong coffee. I prefer a French press and locally roasted coffee.

  2. In a Magic Bullet or other blender, add the whey and about 1/4 cup of the coffee.

  3. Blend in the Magic Bullet.

  4. Add the pumpkin, sugar, vanilla, and spice to the whey mixture. Blend again.

  5. Combine the pumpkin/whey mixture with more coffee in a large mug.

  6. Garnish with cinnamon.
