St. Paddy's Day Super Green Salad

Today I'm making a salad. Not a Plain-Jane boring salad, but a delicious and healthy super green salad with homemade falafel. I'm calling it a St. Paddy's Day salad for no other reason than it's March and the salad is all green.

Falafel Recipe
Ingredients
1 cup dry chickpeas, soaked for 24 hrs in water with 1/2 tsp baking soda - rinsed
2 cloves garlic, peeled and chopped
1/2 c diced onion
1/2 c parsley, chopped
1/2 c cilantro, chopped
3 TBSP flour
1 tsp cumin
3/4 tsp salt
1/2 tsp baking soda
1/2 tsp coriander
1/4 tsp black pepper
1/8 tsp cayenne
pinch of cinnamon
Instructions
In a food processor, combine all ingredients and pulse until coarse and mealy.
Form into 1 1/2 inch balls and flatten slightly.
Spray lightly with oil, then air fry for 10-15 minutes, turning once. You can also bake at 425F until lightly browned.
We are serving these with our big salad, but you can also serve them in a pita with hummus, tzatziki, tahini dressing, sliced radishes, and lettuce.
This recipe makes about 12 falafels. If you don't need that many, you could make a 1/2 batch. Or simply freeze the leftovers for a future meal. Another option would be to make them burger-sized and have a falafel burger for dinner!
Big Green Salad
Ingredients
Mixed greens
Broccoli
Cucumber
Edamame
Scallions
Pasley
Celery hearts
Optional - any other green veggie you like, such as asparagus, snap peas, green beans, zucchini, etc.
Dressing
In a food processor, a magic bullet, or equivalent, blend together the following:
Juice of 1 lemon
1 TBSP onion or shallot, chopped
1 Garlic clove
Splash of white vinegar
6-8 Basil leaves
1 TBSP Olive oil
Toppings
Select a couple of toppings to add extra flavor and texture:
Pepitas, Boiled eggs, Olives, Sprouts, Parmesan cheese, Sunflower seeds, Avocado, or Croutons
This Super Green Salad is full of nutrients from the veggies, and the edamame and falafel add the protein for a well-rounded meal in one big bowl! You don't have to wait for St. Paddy's Day...make it tonight!
