Making Spring Pea Salad

I love a delicious seasonal salad! A good salad makes eating your veggies so enjoyable, and this salad is one of those salads! With just a handful of veggies and a yummy dressing, you can make this for dinner tonight! And, like so many of my favorite recipes, you can customize it with other ingredients you love.

The Recipe

Salad Ingredients

  • 2 cups sugar snap peas, cleaned, destringed, sliced on a bias

  • 1/2 cucumber, chopped

  • 3-4 radishes, chopped

  • 3 scallions, sliced on a bias

  • 3 TBSP cilantro, chopped


Dressing Ingredients

  • 2 TBSP lime juice

  • 1/2 TBSP toasted sesame oil

  • 1/2 TBSP maple syrup

  • 1/4 TBSP olive oil

  • 2 tsp fresh ginger, grated

  • 1 clove garlic, minced

  • salt, to taste


Garnish

  • more cilantro

  • sesame seeds


Directions

  1. Prep all the veggies and place in a large bowl.

  2. In a smaller bowl, whisk together all the dressing ingredients.

  3. Pour over and toss to coat.

  4. Serve it up and top with the garnish ingredients

Variations

This is a very versatile recipe; the options are endless. You can obviously omit any ingredients you aren't a fan of and then try some of these additions.

  • Add in additional Spring veggies such as asparagus, ramps, and baby greens.

  • If you don't like cilantro, substitute it with parsley.

  • Use lemon juice in place of lime juice.

  • Add protein with edamame, marinated tofu, grilled chicken chunks, or cannellini beans.

  • Use honey instead of maple syrup.

  • Try other garnishes like slivered almonds, pepitas, sunflower seeds, chopped pistachios, or use a combination of them all.
