Making Spring Pea Salad

I love a delicious seasonal salad! A good salad makes eating your veggies so enjoyable, and this salad is one of those salads! With just a handful of veggies and a yummy dressing, you can make this for dinner tonight! And, like so many of my favorite recipes, you can customize it with other ingredients you love.

The Recipe
Salad Ingredients
2 cups sugar snap peas, cleaned, destringed, sliced on a bias
1/2 cucumber, chopped
3-4 radishes, chopped
3 scallions, sliced on a bias
3 TBSP cilantro, chopped
Dressing Ingredients
2 TBSP lime juice
1/2 TBSP toasted sesame oil
1/2 TBSP maple syrup
1/4 TBSP olive oil
2 tsp fresh ginger, grated
1 clove garlic, minced
salt, to taste
Garnish
more cilantro
sesame seeds
Directions
Prep all the veggies and place in a large bowl.
In a smaller bowl, whisk together all the dressing ingredients.
Pour over and toss to coat.
Serve it up and top with the garnish ingredients

Variations
This is a very versatile recipe; the options are endless. You can obviously omit any ingredients you aren't a fan of and then try some of these additions.
Add in additional Spring veggies such as asparagus, ramps, and baby greens.
If you don't like cilantro, substitute it with parsley.
Use lemon juice in place of lime juice.
Add protein with edamame, marinated tofu, grilled chicken chunks, or cannellini beans.
Use honey instead of maple syrup.
Try other garnishes like slivered almonds, pepitas, sunflower seeds, chopped pistachios, or use a combination of them all.
