Making Guacamole From Scratch

It's almost Cinco de Mayo, the perfect day to enjoy some freshly made guacamole. However, you don't need to serve this only on the 5th of May; it's delicious anytime! And, as far as snacks go, it's pretty healthy too! In fact, did you know that a typical serving of avocado (1/3 of one) has only about 80 calories, 7g of healthy fat, 3g fiber and lots of essential vitamins.

The Recipe

Ingredients

  • 2 ripe avocados

  • 1-2 TBSP of finely diced red onion

  • 1/4 cup chopped cilantro

  • zest and juice of 1/2 a lime

  • 1 finely diced jalapeño pepper, more or less to taste

  • 1/4 tsp salt (add more at the end if needed)

  • 1/2 tsp cumin

  • 1 clove minced garlic


Directions

  1. Place the avocados in a large bowl and mash them with a fork or potato masher.

  2. Stir in the remaining ingredients.

  3. Add more salt if needed.


Notes

  1. If you are sensitive to heat, cut out the jalapeño seeds and membrane; that is where most of the heat is.

  2. If you prefer spicier, use the entire jalapeño, consider adding a second one, or add a pinch of cayenne.

Recipe Variations/Additions

  • Stir in finely diced tomatoes.

  • Use lemon instead of lime.

  • Roast your peppers before dicing.

  • Add in 1/2 cup fresh corn.


Serving Suggestions

We all love guacamole scooped up with corn tortilla chips, but there are other ways to enjoy this delicious food!

  • Use it to make a spiced-up version of avocado toast.

  • Use it as a condiment for your burger (it is especially delicious on a black-bean burger).

  • Use it on pasta instead of pesto.

  • Stir it into egg salad in place of mayo.

  • Serve a dollop with eggs, rice & beans, green salad, shrimp, and fried plantains.


Leftovers?

If you somehow manage not to eat the whole bowl, you will find that leftovers turn brown pretty quickly. The best way to minimize this is to transfer leftovers to a smaller bowl with an airtight lid, squeeze a wedge of lime juice over the top, then place plastic wrap over the guacamole, pressing it down until it adheres to the guacamole. Place on the lid and store in the refrigerator. This won't completely prevent the browning, but it will slow it down.
