We have all probably had a breakfast burrito, or at the very least we have heard of them. Today I had every intention of turning that concept into a Breakfast Quesadillas. However, we could not find corn tortillas in our grocery store for some reason (and I prefer corn tortillas), but we did find some tostadas shells, which are essentially flat, hard, corn tortillas.
This ends up being a perfect example of using what you have. I took my idea of creating a Breakfast Quesadilla and changed it to use the tostada shells.

The Recipe (and I use this term loosely)
Ingredients
4 tostada shells
4 eggs
1/4 tsp garlic powder
sprinkle of salt
shredded cheese
chopped cilantro
fresh salsa
jalapeño relish (optional)
Instructions
Preheat the oven to 350F. Place the tostada shells on a baking sheet. Warm in the oven for 4 minutes.
While the shells are warming, fry 4 eggs over-medium to over-well.
Pull the shells out of the oven and immediately sprinkle with shredded cheese. Top each one with a fried egg, salsa, and any other toppings you choose. Finish with chopped cilantro.

Variations
There are so many ways you can change these up.
The fresh salsa I used contained a lot of the flavor. It was essentially diced tomato, onion, and jalapeno. If you don't have the salsa, you can use a couple of those ingredients on their own.
I like heat which I added in 3 ways. I used a habanero cheddar, hot salsa, and a jalapeno relish. If you don't like so much heat, use a mild cheese like mozzarella, cheddar, or a taco blend. Use a mild salsa. Skip the jalapeno relish.
Skip the fresh tomato salsa and use corn and black bean salsa.
Add avocado or guacamole.
Don't like cilantro? Skip it entirely or use parsley or chives instead.
