Super Versatile Grilled Vegetables

I love marinated grilled veggies! Slice up a bunch of veggies you love (my favorites are zucchini, summer squash, eggplant, mushrooms, onion, and bell peppers), marinate them, and throw them on the grill. These super versatile grilled vegetables make your weekly meal planning easy!

Make a Delicious Marinade

There are SO many options. My favorite marinade looks something like this:

1/2 c olive oil

1/4 c balsamic vinegar

salt & pepper

1 tsp garlic powder

1 tsp rosemary

1/2 tsp red pepper flakes

But honestly, I don't measure and will likely change up the vinegar or add a different herb. It always turns out a little different, but delicious every time!


Another marinade option:

1/2 c olive oil (1-2 TBSP of which is the oil from a jar of sundried tomatoes)

1/4 c red wine vinegar

salt & pepper

1 tsp garlic powder

1 tsp fresh thyme


If you want to use these veggies in Asian dishes, try this marinade:

1/2 c olive oil

2 TBSP soy sauce

1 tsp sesame oil

1 finely minced garlic clove (or 1 tsp garlic powder)

1 tsp freshly grated garlic


Or, if you want to make it super simple, you can always buy a bottle of vinaigrette salad dressing to use as a marinade or just coat the veggies with a little bit of olive oil before throwing them on the grill.


My Favorite Vegetables to Grill

Eggplant

Zucchini

Summer Squash

Mushrooms

Onion

Bell Peppers

Poblano Peppers

Asparagus

Cherry Tomatoes


You can also grill Broccoli, Cauliflower, and Carrots, but I find they are a little less versatile.


Prepare the Vegetables

Choose your favorite vegetables and wash them. Allow them to dry on a towel. How you cut up the vegetables depends on how you are going to grill them. If you use a grill basket, you can cut the into smaller pieces. I like to cook them directly on the grill, so I cut them into larger pieces. I also think this gives more versatility for using them later. Once the veggies are cut, coat them in the marinade and allow them to sit while you heat up the grill.

How to Use Grilled Vegetables

There are so many ways to use these veggies. This is why I love making a big batch on the weekend and using them all week long.

  • Top grilled eggplant with marinara sauce, shredded mozzarella, and grated parmesan for healthy grilled eggplant parmesan.

  • Grilled Vegetable Lasagna. Use the veggies in place of noodles. In a baking dish, layer any combination of grilled eggplant, zucchini, summer squash, bell pepper, fennel, onion, and mushrooms with your typical lasagna fixings (eg. ricotta, shredded mozzarella, grated parmesan, and sauce).

  • Use chopped grilled veggies as a delicious pizza topping.

  • Make penne pasta, and serve with olive oil, minced garlic, chopped grilled vegetables, and fresh basil.

  • Make a grilled veggie sandwich on toast. Dijon mustard and fresh lettuce make this so yummy!

  • Finely chop the grilled veggies and add to a quiche, frittata, or scrambled eggs.

  • Serve the veggies right off the grill as a tasty side dish to your summer meal.

  • Chop super fine to use as a vegetable salsa. Serve with wedges of pita bread or pita chips.

  • Make a quinoa, couscous, or orzo salad. Add the veggies to any salad, and dress with leftover marinade. Add chopped grilled veggies, chopped sundried tomatoes, chopped kalamata olives, chopped fresh basil, and crumbled feta.

  • Make grilled veggie tostadas. Top tostadas shells with refried beans, chopped grilled vegetables, chopped scallions, cotija cheese, and chopped fresh cilantro. Serve with fresh salsa.

  • Make an Asian-inspired marinade and serve it up with some rice noodles and broth.


I Told You!

Was I right or was I right? Grilled veggies are so easy and they give you endless meal options to use them up. In the video above, I grilled up a ton of veggies in about an hour (from cleaning veggies to removing them from the grill) and had several meals.
