Strawberry Balsamic Salad Dressing Recipe

I'm a huge fan of homemade salad dressings. In fact, a couple of years ago, I wrote a post about the formula I use to make an endless assortment of dressings. This one has all the components of my typical dressings, but the ratio is a little different because I'm letting strawberries be the star of the show.

The Fruit
I try to use in-season produce as much as possible. In fact, when I filmed the video above, strawberries were indeed available at my local Farmers' Market. However, if berries aren't in season when you want to make this dressing, you have a couple of options. You can use frozen berries (extra points if you have Farm Market berries in your freezer) or simply use the strawberries that are always available in your local grocery store. Just keep in mind, the riper the berries, the better the dressing will be.
I made this dressing in a food processor, but you could also use a Magic Bullet, a blender, or just mash the strawberries by hand.

The Recipe
Ingredients
1 cup chopped strawberries
1/4 cup balsamic vinegar
1 TBSP maple syrup (or honey, or white sugar)
1 heaping tsp plain or vanilla yogurt, mayo, or sour cream
a good pinch of salt
1/8 cup olive oil
Instructions
Puree the berries in a food processor.
Add in vinegar, sweetener, yogurt, and salt. Process until well blended.
With the food processor running, stream in olive oil.
The Perfect Strawberry Salad
You can use this dressing on any green salad, but my favorite ingredients are:
baby spinach
chopped cucumber
sliced strawberries
blueberries
diced red onion
sunflower seeds
feta cheese
fresh basil and/or parsley
