Making Vegetarian Sloppy Joes

I haven't had a Sloppy Joe in over 20 years. I'm not a huge fan of the tofu crumble substitute for ground beef, so when I came across a recipe for Lentil Sloppy Joes, I just had to give them a try.

The Recipe
Ingredients
3 cups vegetable broth
1 onion, finely diced
1 red bell pepper, finely diced
1 1/2 TBSP chili powder
1 1/2 cup dried brown lentils
1 15oz can diced fire-roasted tomatoes
1/4 cup ketchup
2 TBSP soy sauce
2 TBSP dijon mustard
2 TBSP brown sugar
1 TBSP apple cider vinegar
2 tsp Worcestershire sauce
2 cloves garlic, minced
salt to taste
Directions
Place 1 cup of broth in a large saucepan.
Add the onion and bell pepper and cook until soft.
Add the chili powder and mix well. Add the remaining broth and the remaining ingredients.
Mix well, bring to a boil, then reduce the heat to a simmer. Cover and cook for 45 minutes to 1 hour, stirring occasionally. If the mixture seems to get too dry, add up to another 1/3 cup of broth or water.
Serve on a burger roll with your favorite veggies on the side.

Optional Trimmings
I always ate sloppy joes plain. But did you know you can dress them up? There are several different ways you can make your sloppy joe even better. Try topping yours with one or more of the following:
additional diced onion or bell pepper
jalepeno
cheese of your choice
avocados
relish or pickles
pickled onions or pickled jalapenos
Variations
Did you know that Worcestershire is not vegan? Simply skipping this ingredient or finding a vegan version lets you make vegan sloppy joes.
Need something gluten-free? Use a gluten-free roll, or use the sloppy joe filling differently. I used leftover filling as a stew with a fried egg on top and served it for brunch! It was delicious!
