Making Easy Coffee Ice Cream From Scratch
I love ice cream, especially homemade ice cream. While yes, I could just grab some from the store next time I'm there, I prefer to make things at home whenever I can so I can control the ingredients.
Homemade ice cream feels bougie, but it is so easy to do. If you own an ice cream maker, pull it out and make ice cream with me.

The Recipe
This recipe is so simple. I started with my basic vanilla ice cream that I made HERE, and made a couple of small changes.
Ingredients
2 cups heavy cream
1 1/2 cups whole milk
2/3 cup sugar
3 TBSP instant coffee granules dissolved in 1/2 cup of hot water
2 tsp pure vanilla extract
a pinch of salt
Directions
Make sure your ice cream maker bowl is in the freezer for a full 24 hours before you start.
In a large saucepan, combine all ingredients.
Heat and stir until the sugar is dissolved.
Chill the mixture for at least 2 hours or overnight.
Pour the mixture into the ice cream maker. Run the machine following the manufacturer's instructions. This will likely be for about 20-30 minutes.
Once the ice cream is the consistency of soft-serve, transfer it to an airtight freezer-safe container and freeze overnight or at least 8 hours, if you can wait that long.
Serving Ideas
Obviously, you can simply eat coffee ice cream all on its own, but it's also fun to dress it up a little too!
Top it with homemade magic shell, as I did in the video above. Or use hot fudge or caramel sauce.
Add one or several of the following during the last 5 minutes of churning or simply sprinkle on top: chocolate chips, chocolate-covered espresso beans, brownie chunks, chopped-up candy bar (try a Butterfinger or Heath bar).
Use coffee ice cream to make ice cream sandwiches using chocolate cookies like THESE.
